Abstract

EVALUASI TINGKAT PENGETAHUAN HIGIENITAS PEDAGANG DAGING AYAM DI PASAR TRADISIONAL DI KECAMATAN TEMON KABUPATEN KULON PROGO

INTISARI

Daging ayam merupakan jenis makanan bergizi yang sangat popular di kalangan masyarakat yang bermanfaat sebagai sumber protein hewani. Daging ayam perlu mendapat pengawasan dari proses produksi, penyimpanan, pengemasan, sampai dengan pendistribusiannya. Penjual daging ayam di pasar tradisional adalah ujung tombak pendistribusian daging ayam sampai ke segala lapisan masyarakat. Aspek pengetahuan higienitas menjadi penting agar kualitas daging ayam yang dijual terjamin keamanannya. Tujuan penelitian ini adalah mengevaluasi tingkat pengetahuan higienitas penjual daging ayam di pasar tradisional Kecamatan Temon. Penelitian dilakukan melalui wawancara, survey, studi pustaka, observasi dan pengukuran pengetahuan terhadap 31 pedagang daging ayam di pasar tradisional di Kecamatan Temon. Kuesioner dan data dari responden terkait karakteristik pedagang, manajemen berdagang dan manajemen tempat berdagang telah diuji validitas dan reliabilitasnya dengan hasil valid dan reliabel. Tingkat pengetahuan higienitas pedagang di pasar tradisional Kecamatan Temon dengan tingkat pengetahuan yang baik sebanyak 4 responden (12,9%), tingkat pengetahuan cukup sebanyak 22 responden (17%) dan tingkat pengetahuan kurang sebanyak 5 responden (16,1%).

EVALUATION OF AWARENESS LEVEL OF HYGIENITIES OF MEAT CHICKEN TRADERS IN TRADITIONAL MARKET IN TEMON KULON PROGO

ABSTRACT


Chicken is a type of nutritious food that is very popular among people who are useful as a source of animal protein. Chicken meat needs to be supervised from the production process, storage, packaging, until the distribution. Chicken meat sellers in traditional markets are the spearhead of chicken meat distribution to all levels of society. Aspects of hygiene knowledge become important so that the quality of chicken meat sold is guaranteed security. The purpose of this research is to evaluate the awareness level of hygiene of chicken seller in traditional market of Temon Sub-district. The research was conducted through interviews, survey, literature study, observation and measurement of knowledge of 31 traders of chicken meat in Traditional Market in Temon Sub-district. Questionnaires and data from respondents related to the characteristics of traders, trade management and management of trading places have been tested the validity and reliability with valid and reliable results. Level of awareness of traders' hygiene in traditional markets Temon Subdistrict with good knowledge level of 4 respondents (12.9%), knowledge level of 22 respondents (17%) are adequate and knowledge level of 5 respondents (16.1%) are deficient.
