Abstract

PROFILE ANALYSIS OF CHICKEN SLAUGHTERHOUSE (CSH)
IN YOGYAKARTA CITY BASED ON
STANDAR NASIONAL INDONESIA (SNI)

The purpose of this research was to know the profile analysis of Chicken Slaughter House (CSH) in Yogyakarta City and to knowthe standardization of CSH based on Standar Nasional Indonesia (SNI). This research uses census method to 14 respondents from chicken slaughter place spread in Yogyakarta City area.Among them are in subdistrict Umbulharjo, Mergansan, Kotagede, Gondokusuman and Ngampilan. The variables used in this research are Chicken Slaughter House (CSH) according to SNI. Assessment is done by making scoring with the provisions of the value of 80-100% (according to SNI), 60-79 (less appropriate SNI) and <59 (not compliant with SNI). The data obtained were analyzed descriptively. The results showed that the scale of business CSH 85.72% small scale and 14.28% large scale. All forms of CSH business are in the form of Business Trading (BT). Halal certified (71,42%) and those with Hinder Ordonantie (HO) (64,28%). From the data obtained descriptively by comparing CSH based on SNI that is 92,8% (not according to SNI), 7,2% (less suitable SNI) and no CSH according SNI. From the analysis, the average CSH result in Yogyakarta City only reached 46,07% from SNIstandard. Non-conformity assessment components of SNI include; Requirement of chicken slaughter location (48,66%), chicken slaughter facilities (55,97%), CSH main building space (55,56%), CSH equipment (56,22%), employee and company hygiene requirements (48,57%), meat carrier vehicle requirements (7,14%), chicken cutting (58,04%), Packaging (47,32%), Storage and shipping (3,57%). Component assessment of SNI that is the process of acceptance of chicken (79,64%). The conclusion from the research is that the CSH of Yogyakarta City has not reached SNI.

INTISARI
Tujuan penelitian ini adalah untuk mengetahui profil rumah pemotongan ayam di Kota Yogyakarta dan mengetahui standarisasi rumah pemotongan ayam berdasarkan Standarisasi Nasional Indonesia (SNI). Penelitian ini menggunakan metode sensus terhadap 14 responden dari tempat pemotongan unggas yang tersebar di wilayah Kota Yogyakarta. Diantaranya ada di kecamatan Umbulharjo, Mergansan, Kotagede, Gondokusuman dan Ngampilan.Variabel yang digunakan dalam penelitian adalah Profil Rumah Pemotongan Ayam (RPA) menurut SNI. Penilaian dilakukan dengan membuat scoring dengan ketentuan nilai 80-100% (sesuai SNI), 60-79 (kurang sesuai SNI) dan <59 (tidak sesuai SNI). Data yang diperoleh dianalisa secara deskriptif. Hasil penelitian menunjukan bahwa skala usaha RPA 85,72% berskala kecil dan 14,28% berskala besar. Semua bentuk usaha RPA yaitu berbentuk Usaha Dagang (UD). Bersertifikat halal (71,42%) dan yang mempunyai Hinder Ordonantie (HO) (64,28%). Dari data yang diperoleh secara deskriptifdengan membandingkan RPA berdasarkan SNI yaitu 92,8% (tidak sesuai SNI), 7,2% (kurang sesuai SNI) dan tidak ada RPA yang sesuai SNI. Dari analisa diperoleh hasil rata-rata RPA di Kota Yogyakarta baru mencapai 46,07% dari standar SNI. Komponen penilaian yang tidak sesuai SNI meliputi:persyaratan lokasi pemotongan ayam (48,66%), sarana RPA (55,97%), ruang bangunan utama RPA (55,56%), peralatan RPA (56,22%), persyaratan higiene karyawan dan perusahaan (48,57%), persyaratan kendaraan pengangkut daging (7,14%), pemotongan ayam (58,04%), pengemasan (47,32%), penyimpanan dan pengiriman (3,57%).Komponen penilaian yang sesuai SNI yaitu proses penerimaan ayam (79,64%). Kesimpulan yang diperoleh dari penelitian yaitu bahwa RPA Kota Yogyakarta belum mencapai SNI.
