Abstract

Katuk leaves (Sauropus androgynus(L) Merr) contain a lot of protein, mineral, and
vitamin but they are vulnerable enough. As the results, the leaves should be dried and
protected by encapsulation process in order to save their important chemical
compounds. For the drying process, the researcher used Arabic Gum as the hydrocolloid
with a certain degree of concentration. The concentration was selected carefully in order
to get the desired product. If the concentration was too high, the solution would be strong
and the drying process would be difficult. On the other hand, if the concentration was too
low, the solution would be dilute and the drying process would not be effective. The
research, therefore, was aimed at finding out the best Arabic gum concentration and the
best extraction techniques for having the highest antioxidant activity and chlorophyll
contain
The Katuk powder was made by using various concentration of Arabic gum: 5 %
and 10 % with extraction techniques 1:2 and 1:3. During the experiment several
analyses were done on the water contain, antioxidant activity, rehydration level,
chlorophyll contain, and its colour.
The results showed that the Katuk leaves powder which received 5 % of Arabic
gum and extraction techniques 1:2 had the highest antioxidant activity and chlorophyll
content. Then it was also found that the higher solution concentration or the more
extraction techniques given, the lower antioxidant activity and chlorophyll content would
be.
