INTISARI

Tanaman kersen (Muntingia calabura L.) adalah tanaman perdu yang banyak ditemui di Indonesia. Banyak masyarakat yang telah lama menggunakan tanaman kersen terutama daunnya sebagai obat herbal. Diketahui daun kersen memiliki aktivitas antioksidan yang berpotensi untuk menyembuhkan berbagai penyakit, terutama penderita diabetes, asam urat dan kolesterol. Tujuan penelitian ini untuk mengetahui pengaruh pengeringan daun kersen terhadap aktivitas antioksidan dan total fenol. Penelitian ini dilakukan pada daun kersen yang dikeringkan. Metode percobaan yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan metode pengeringan oven dan sangrai serta variasi konsentrasi bubuk daun kersen adalah 5%, 8% dan 11%. Penelitian ini terdiri pembuatan bubuk daun kersen dan analisa kimia, antara lain analisa kadar air, analisa aktivitas antioksidan metode DPPH dan analisa total fenol. Hasil penelitian menunjukkan bahwa bubuk daun kersen yang dikeringkan menggunakan metode oven dengan konsentrasi bubuk daun kersen 11% memiliki aktivitas antioksidan dan total fenol paling tinggi yaitu 61,42% dan 0,37 mg GAE/100mg.

EFFECT OF DRYING METHODS ON ANTIOXIDANT ACTIVITY AND TOTAL PHENOL CHERRY (Muntingia calabura L.) LEAF WITH VARIOUS CONCENTRATION

ABSTRACT

Cherry crop (Muntingia calabura L.) is a herbaceous plant that is found in Indonesia. Many communities have long used the cherry crop, especially the leaves as an herbal remedy. Cherry leaf known to have antioxidant activity which has the potential to cure various diseases, particularly diabetes, uric acid and cholesterol. The purpose of this study to determine the effect of cherry leaf drying of antioxidant activity and total phenols. Research was conducted on the dried cherry leaves. Methods The experiment was completely randomized design (CRD) with oven drying and roasting methods and variations in the concentration of cherry leaf powder is 5%, 8% and 11%. This study consisted of making powdered leaves of cherry and chemical analysis, including the analysis of water content, analysis DPPH antioxidant activity and total phenol analysis. The results showed that the cherry dried leaf powder using the oven method with a concentration of 11% cherry leaf powder have antioxidant activity and total phenol highest of 61.42% and 0.37 mg GAE / 100mg.
